Rachaels Spicy Stuffed Chicken Poblano

  1. In a pan with 2 tbsp evoo, medium high heat, sautee bacon, poblano pepper, garlic until bacon is crunchy and pepper is tender. In a separate bowl add feta,bread crumbs and adobe seasoning. Toss till mixed. Add bacon mix to bread crumb mix. Toss well. Let sit while prepping chicken breast. On thick side of breast, run knife from top to bottom creating a pocket.
  2. Insert knife in about 2 inches trying not to poke through breast. Evenly stuff chicken with poblano mix. Brush chicken with evoo on both sides and sprinkle with red pepper or kickin chicken seasoning.
  3. Preheat grill and grill for 7-10 min on each side. Enjoy with Black Bean Succotash.
