Susan'S Hush Puppies

  1. Mix milk and lemon juice together and set aside for 5 to 10 minutes to sour; add egg and beat well.
  2. In a mixing bowl, combine the flour, corn meal mix and onion, mixing well.
  3. Add only enough of the milk mixture to moisten the dry ingredients; the batter should be thick (don't overmix).
  4. Allow batter to stand at room temperature for at least 30 minutes.
  5. Using a small spoon, drop batter into hot oil, rinsing the spoon in between the drops of batter in a glass of cold water.
  6. Avoid stirring the batter.
  7. Cook until medium brown and floating.
  8. Makes 1 dozen hush puppies.
