Susan'S Hush Puppies
- 1/4 c. milk or 1/4 to 1/2 c. buttermilk
- 1/2 tsp. lemon juice
- 1/4 c. self-rising flour
- 1/2 c. self-rising corn meal mix
- 1/2 large onion, finely chopped
- 1 egg, beaten
- cooking oil
- Mix milk and lemon juice together and set aside for 5 to 10 minutes to sour; add egg and beat well.
- In a mixing bowl, combine the flour, corn meal mix and onion, mixing well.
- Add only enough of the milk mixture to moisten the dry ingredients; the batter should be thick (don't overmix).
- Allow batter to stand at room temperature for at least 30 minutes.
- Using a small spoon, drop batter into hot oil, rinsing the spoon in between the drops of batter in a glass of cold water.
- Avoid stirring the batter.
- Cook until medium brown and floating.
- Makes 1 dozen hush puppies.
