Soul Gumbo Recipe
- 1 (10 oz.) pkg. frozen chopped spinach
- 1 (10 oz.) pkg. frozen chopped mustard greens
- 1 (10 oz.) pkg. frozen chopped turnip greens
- 1 (10 oz.) pkg. frozen chopped collard greens
- 1/2 head cabbage, shredded
- 4 bay leaves
- 1 tsp. dried basil
- 1 tsp. ground thyme
- 1/8 tsp. allspice
- 1/8 tsp. ground cloves
- 2 qt. (8 c.) water
- 1/2 stick butter or margarine (1/4 c.)
- 3 onions, chopped
- 1 1/2 c. chopped green pepper
- 1 1/2 c. chopped celery
- 2 Tbsp. vegetable oil
- 1 lb. veal stew meat, well trimmed and cut into small pieces
- 1 lb. ham, well trimmed and cut into small pieces
- 1 bunch green onions, chopped
- 5 garlic cloves, minced
- 1/2 c. chopped fresh parsley
- 1/4 tsp. cayenne pepper
- salt and pepper to taste
- 1/2 stick (1/4 c.) butter or margarine
- 5 Tbsp. all-purpose flour
- freshly cooked rice
- gumbo file (optional)
- Combine first 11 ingredients in a Dutch oven or other large pot.
- Cover and bring to a boil.
- Reduce heat and simmer while preparing remainder of recipe.
