Cranberry Pecan Cookies
- t/3 cup flour
- t/2 teaspoon salt
- t/2 teaspoon baking soda
- t/2 cup old-fashioned oats
- t 1/2 sticks (6 oz.) unsalted butter, softened
- t/3 cup sugar
- t/3 cup brown sugar
- t egg
- t teaspoon vanilla
- t cups pecan pieces
- t/3 cup dried cranberries
- Preheat oven to 350. Whisk together flour, salt, baking soda. Stir in oats. In medium bowl, cream butter, sugar and brown sugar until light and fluffy. Add egg. Beat in vanilla. Fold in flour mixture until incorporated. Mix in pecans and cranberries.
- Line cookie sheets with parchment paper. Form mixture into 1 1/4 inch balls. Place 3 inches apart. Bake 10-12 minutes. Let cool completly on baking sheet.
