Farm Raised Cat Fish Corn Bread With Jalapenos
- 1 box Jiffy Corn Bread Mix
- 2 large eggs
- 1/4 cup peanut oil
- 1 1/2 Cups of whole milk
- 1/2 Stick unsalted butter
- 5 Whole jalapenos sliced ((Seeded optional))
- 4 Roma tomatoes medium dice
- 2 Large shallots sliced thin
- 1 TBLSPN cumin
- 1 teaspn chipolte powder
- 3 Farm raised catfish fillets
- Pre heat oven to 350 degrees
- Grease 4 inch glass casserole dish with 1/2 of the cold butter.
- Mix Jiffy corn bread with milk eggs and oil slightly.
- Then add cumin, chipolte powder, shallots, tomatoes and jalapenos. Pour in greased pan.
- Cut catfish into bit sized pieces. Place catfish into cornbread batter spread all over. Bake for 20-25 minutes.
- Serve with sour cream and a salsa.
