Wild Arugulla Caprese With Mandarin Balsamic Vinaigrette
- 2 Medium Vine Ripened Tomatoes
- 1 Tbsp Balsamic Vinegar
- 2 Tsp Olive Oil
- 1 Tbsp Black Pepper
- 1 Cup Wild Arugula
- 1 Lb Fresh Mozzarella Presliced
- 1/2 Cup Sliced Basil
- 2 Mandarin Orange Fruit Cups in Light Syrup
- 1. Slice your Basil into ribbons
- 2. Chop your slices of Mozzarella into quarters
- 3. Drain Orange Fruit Cups into a bowl
- 4. Cut Tomatoes into wedges
- 5. In the orange juice bowl add the Balsamic Vinegar and whisk in Olive Oil
- 6. Whisk for about 30 seconds or until dressing is emulsified
- 7. Combine all your ingredients in a big salad bowl
- 8. Plate, top with diced remaining Basil, drizzle 1 Tbsp Balsamic Orange Dressing over top
- 9. Grind 1 1/2 tbsp Black Pepper, Serve!
