Pumpkin Butterscotch Cookies

  1. Preheat oven to 350 degrees. Using a stand mixer with the paddle attachment, cream the sugar and shortening for 3-4 minutes. Mix in the egg, vanilla and pumpkin.
  2. In another bowl, combine flour, salt, baking soda, baking powder and cinnamon. Add to pumpkin mixture and mix until just combined. Stir chips in with a spoon.
  3. Drop spoonfuls onto sheet pans lined with parchment paper. Bake for about 12-15 minutes.
