Shrimp Casserole
- 1 c. celery, chopped
- 1 c. onion, chopped
- 1 c. bell pepper, chopped
- 2 cloves garlic, chopped
- 1/2 c. butter
- 1 can Cheddar cheese soup
- 1 can cream of mushroom soup
- 2 c. rice, cooked
- 1 (2 oz.) jar pimento
- 3 c. shrimp or crawfish
- salt and pepper to taste
- 1 Tbsp. hot sauce
- 1/2 c. green onions
- 1/4 c. parsley
- 1/4 c. bread crumbs (Italian)
- Spray Pam on 3-quart casserole dish.
- Saute first 5 ingredients.
- Add rice and remaining ingredients.
- Mix well in mixing bowl.
- Pour in casserole dish; sprinkle with bread crumbs. (Can be frozen at this stage.)
- Bake at 350u0b0 for 40 minutes. (Serves 8.)
