Chicken With White Beans And Tomatoes
- 2 15.5-ounce cans cannellini beans, rinsed
- 1 pint grape tomatoes
- 4 sprigs fresh thyme
- 4 sprigs fresh oregano, plus leaves for garnish
- 2 garlic cloves, smashed
- 1/4 teaspoon crushed red pepper (optional)
- 1/2 cup of dry white wine
- 1/2 cup of chicken broth
- 2 tablespoons olive oil
- kosher salt and black pepper
- 8 boneless, skinless chicken thighs (about 2 pounds total)
- In a heavy pot, saute chicken thigh with garlic and olive oil until it's golden and crispy on the surface. Remove from pan. Add 1/2 cup of white wine and broth and reduce.
- In the same pot, toss the beans and tomatoes with the thyme and oregano sprigs, garlic, red pepper, 1 tablespoon of the oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Add Chicken thighs and simmer in the pot for 30 minutes.
