Tony'S Gumbo

  1. Boil and debone chicken (canned chicken meat and broth may be used).
  2. Set aside.
  3. In a large pot or skillet, heat oil and add flour to make roux.
  4. Stir while browning until very brown, almost burned.
  5. Add water and stir.
  6. Add other ingredients.
  7. Cover; let cook for 30 minutes on low to medium heat, stirring occasionally. Add more water, if needed.
