Tony'S Gumbo
- 1 c. diced bell pepper
- 2 c. diced white onions
- 1 c. diced celery
- 2 c. sliced okra
- 1 chicken
- 1 lb. link sausage
- 1 c. cooking oil
- 1 c. all-purpose flour
- 2 Tbsp. powdered garlic
- salt to taste
- Tabasco sauce to taste
- 1 qt. water (optional)
- 3 lb. peeled shrimp
- 1 lb. crabmeat
- Boil and debone chicken (canned chicken meat and broth may be used).
- Set aside.
- In a large pot or skillet, heat oil and add flour to make roux.
- Stir while browning until very brown, almost burned.
- Add water and stir.
- Add other ingredients.
- Cover; let cook for 30 minutes on low to medium heat, stirring occasionally. Add more water, if needed.
