Shrimp, Chicken, Chorizo Paella

  1. Heat grill
  2. Grill chix thighs, and sausage until just done
  3. Heat about 5 -6 T. Olive oil in large, heavy pan
  4. Add diced shallots and green onions, stir until translucent just starting to lightly brown
  5. Add tomatoes, stir
  6. Chop chic into 1 " pieces, slice sausage, add to pan
  7. Cook together for a few minutes
  8. Add rice, stir for a few minutes
  9. Add white wine, let cook down for a couple of minutes
  10. Add stock
  11. Add saffron and salt
  12. Give everything a good stir, place lid, bring to boil, let simmer for about 35 minutes
  13. Very quickly place shrimp on grill, flip, and after a few seconds put shrimp in paella to finish cooking
  14. Also add fresh peas
  15. Cover, let cook additional 5 minutes or until prawns are cooked" but don't overcook
  16. Remove from grill, let stand for a couple oF minutes
  17. Serve
  18. Add white wine r
