Eclair Cake
- 1 (16 oz.) pkg. graham crackers, divided
- 2 (3.4 oz.) pkg. vanilla instant pudding mix
- 3 c. milk
- 1 c. sugar
- 1/2 c. butter or margarine
- 1/3 c. milk
- 1/2 c. semi-sweet chocolate morsels
- 1/2 c. chopped pecans
- Layer 1/3 of the graham crackers in a 13 x 9 x 2-inch pan. Combine pudding mix and 3 cups milk in a large mixing bowl.
- Beat at low speed with an electric mixer (about 2 minutes).
- Fold in whipped topping; spoon half of the mixture on graham crackers. Repeat layers, ending with graham crackers.
- You may not need all the crackers.
- Combine sugar, butter and 1/3 cup milk in saucepan. Bring to a boil, stirring constantly. Boil 1 minute, stirring often.
- Remove from heat.
- Stir in morsels.
- Spoon over crackers and top with pecans.
- Cover and chill 8 hours.
- Yields 12 to 15 servings.
