Eclair Cake

  1. Layer 1/3 of the graham crackers in a 13 x 9 x 2-inch pan. Combine pudding mix and 3 cups milk in a large mixing bowl.
  2. Beat at low speed with an electric mixer (about 2 minutes).
  3. Fold in whipped topping; spoon half of the mixture on graham crackers. Repeat layers, ending with graham crackers.
  4. You may not need all the crackers.
  5. Combine sugar, butter and 1/3 cup milk in saucepan. Bring to a boil, stirring constantly. Boil 1 minute, stirring often.
  6. Remove from heat.
  7. Stir in morsels.
  8. Spoon over crackers and top with pecans.
  9. Cover and chill 8 hours.
  10. Yields 12 to 15 servings.
