Tennessee Black Walnut Cake W/Caramel Icing
- 1/2 cup of shortening
- 1/2 cup of sugar
- 2 eggs
- 1/4 cup buttermilk
- 1 tsp vanilla
- 2 bananas
- 2 cups of flour
- 1/2 tsp baking soda
- 2 cups of black walnuts
- ---Caramel Icing----
- 1 stick of butter
- 1 cup of light brown sugar
- 1/3 cup of heavy cream
- 1 bxo of confection sugar
- 1 tbsp of vanilla
- Beat shortening till cream
- Mix shortening, sugar, eggs, buttermilk, vanilla, & bananas
- Mix flour & baking soda
- Then add to shortening mixture
- Fold walnuts into batter
- Spray baking pan with baking spray to prevent sticking
- Bake for 30 min
- ----Caramel Icing-----
- Melt butter in pan Add brown sugar & cream then bring to a boil
- Remove from burner
- Stir in confection sugar
- Stir in vanilla
- Then cover cake
