Soy Salmon With Cucumber Salsa
- Salsa: 2 medium cucumbers, seeded and cut into 1/4" dice, 2 medium carrots cut into 1/4"dice, 1 bunch radishes, cleaned trimmed and cut into 1/4" dice. 6 T. rice wine vinegar, 6 T. Vegetable Oil, 2 T. toasted sesame oil, 1 T. red pepper flakes, 1 t. sugar, 1/2 c. chopped cilantro, 1/2 cup chopped scallions.
- 2 lbs. salmon filet, skin on. 1 c. soy sauce, 2 T. ginger powder, 4 T. chopped garlic, 2 T. Dijon or wasabi mustard.
- Salsa: combine diced vegetables in a medium sized bowl. In another bowl whisk together oils, vinegar, sugar, pepper flakes, cilantro and scallions. Set aside at room temperature.
- Salmon: Combine all the marinade ingredients in a flat-bottomed container, place salmon skin side down for 15 min., then flip fish so flesh is in marinade. Let marinate for 30 - 60 minutes. Heat grill on high, then lower to medium, Grill salmon for 5-8 minutes skin side down, then flip once and cook until opaque throughout. Top with salsa and serve!
