Soy Salmon With Cucumber Salsa

  1. Salsa: combine diced vegetables in a medium sized bowl. In another bowl whisk together oils, vinegar, sugar, pepper flakes, cilantro and scallions. Set aside at room temperature.
  2. Salmon: Combine all the marinade ingredients in a flat-bottomed container, place salmon skin side down for 15 min., then flip fish so flesh is in marinade. Let marinate for 30 - 60 minutes. Heat grill on high, then lower to medium, Grill salmon for 5-8 minutes skin side down, then flip once and cook until opaque throughout. Top with salsa and serve!
