Oven Baked Sliced Potatoes

  1. If you want to leave the skins on the potatoes, you may. Otherwise, peel each potato and drop it into a bowl of cold water to keep it from browning.
  2. Slice each potato into 1/4 inch slices and return slices to the cold water.
  3. Line a 15 x 10 inch pan with foil.
  4. Distribute the butter, garlic, thyme and onion over the foil and heat in a 450u0b0 oven just until the butter is melted. Stir well.
  5. Drain the potato slices and dry on paper towels. Arrange the slices in the butter mixture, turning to coat both sides of the slices; overlap as/if necessary.
  6. Bake for 15 minutes at 450u0b0.
  7. Remove from oven and drizzle with lemon juice and sprinkle with parmesan.
  8. Return to the oven and continue baking 10-15 minutes, or until golden.
