Amazing Bean Pie
- Bean Pie Recipe:
- 2 cups Navy Beans
- 4 Lrg AA eggs
- 1 14oz can evaporated milk
- 1 stick of butter
- 1 tspn nutmeg
- 1 tspn cinnamon
- 2 tblspn flour
- 2 cups sugar Options: sub light brown sugar or Equal)
- 2 tblspn vanilla extract
- Pastry Dough Recipe:
- 3 cups of flour (bleached or wheat)
- 3 1/3 cups of vegetable shortening (crisco baking/yellow can)
- 3 tblspn cold water
- Bean Pie Recipe:
- Soak Navy Beans 2 days in advance, refridgerate. Boil Beans until soft, drain water, place beans in blender, mix in with ingredients: butter, milk, eggs, nutmeg, flour, sugar, vanilla about 2-3 min on blend until creamy smooth. Place mixture in small-medium pot, boil mixute until warm to infuse mixture. Pour mixture into 9 inch deep dish pan.
- Pastry Dough Recipe:
- Mix flour and shortening together before adding water, with a fork work the shortening through the flour, until shortening isnt showing, then add water. If pastry mix is crumbling, add more tblspoons of water until it forms together. If mixture seems to slimey or loose, sprinkle extra flour on dough, and mix until soft consistancy. Roll dough in a ball, flatten round with a rolling pin (on wax paper). Place baking pan over dough, flip right side up, allow dough to fall into pan. Make sure dough is neatly placed inside pan, cut off any access along rim of pan. No top layer of dough needed for bean pie.
