Spicey Sloppy Joes
- 1 onion (diced)
- 4 cloves of garlic (minced)
- 1 medium sized carrot (diced)
- 1 celery stalk (diced)
- 1 jalapeno (diced, discard seeds and ribs for milder sauce)
- 1 pound ground beef
- 1 tsp of ground cumin
- 1 tbsp worcestershire sauce
- 1 tbsp of ketchup (add more to make sweeter)
- 1 tsp of tomato paste
- Tabasco to taste
- 1/3 cup of lager or toasted beer
- 1 8oz can of tomato sauce
- 4 hamburger buns or kaiser rolls
- Shredded cheddar (optional)
- 1. Saute onion and garlic with olive oil or butter (add a dash of salt) at medium high heat for 4-5 minutes or until browned. Add carrot, celery and jalapeno and continue to saute for another 4-5 minutes until the vegetables are soft.
- 2. Add ground beef in evenly in pieces over the vegetables. Salt and pepper the beef and add cumin. Allow to sear for 1-2 minutes before breaking up into smaller rounds and mixing with vegetables. Brown the beef for 3-4 minutes.
- 3. Add worcestershire sauce, ketchup, Tabasco and tomato paste. Mixing it into the beef and vegetables. Add tomato sauce and beer, bringing the mixture to a boil, cooking the liquid down for 6-10 minutes (until thick but not dry). Add salt and ketchup to taste.
- 4. Serve beef mixture on buns/rolls, topping with cheddar if desired.
