Stuffin Muffins
- 1 box Chicken Stove Top Stuffing
- 1/2-3/4 roll of Owens or Jimmy Dean sausage
- (can also use 6 slices of bacon)
- 6 eggs
- 1/2 cup milk
- 3 chopped green onions or 1/4 cup purple or white onion
- 1cup Colby/Monterrey Jack blend shredded cheese
- 4-5 shakes garlic pepper
- Preheat oven to 350 degrees. Spray muffin pan with Pam.
- Cook stuffing as per directions on package.
- Cook sausage (or bacon). Set aside.
- After stuffing has cooled, fill muffin pans with stuffing and press to create a crater in the center.
- In separate bowl, whisk eggs, milk, onions,sausage (or bacon), and cheese. Add garlic pepper
- Fill cups with egg mixture and top with a pinch of grated cheese.
- Bake 20 minutes.
