Hearty Three Bean Chili

  1. Heat olive oil in large saucepan over medium-high heat. Add onion,
  2. bell pepper and garlic to pan; saute 3 minutes. Stir in 3/4 cup water
  3. and next nine ingredients (through diced tomatoes), and bring to a
  4. boil. Reduce heat, and simmer 8 minutes.
  5. Stir in cornmeal and cook for 2 more minutes. Remove from heat, and
  6. stir in cilantro. Serve with sour cream. Makes six servings (serving
  7. size = 11/3 cups chili with 1 tbs sour cream).
  8. Per Serving: 180 calories; 4.9 grams (g) fat; 8.4 g protein; 29.5 g
  9. carbs; 8.6 g fiber; 5 milligrams (mg) cholesterol; 714 mg sodium; 2.3
  10. mg iron; 86 mg calcium. n
