Zucchini Chips
- 1/2 cup dry breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 tsp garlic powder
- 1 tsp dried basil
- 1 1/2 tsp kosher salt
- 1/2 tsp pepper
- 1/4 cup milk
- 4 medium zucchinis, thinly sliced
- 1. Preheat oven to 450 degrees & grease 2 baking sheets with cooking spray.
- 2. In a shallow bowl, combine breadcrumbs, parmesan cheese, garlic powder, dried basil, salt & pepper. Whisk to combine.
- 3. Pour milk into another shallow bowl.
- 4. Dip zucchini slices in milk & dredge in breadcrumb mixture. Place coated zucchini slices on prepared baking sheet in a single layer. Spray the tops of the slices with cooking spray.
- 5. Bake for 10 minutes or until crisp & brown. Flip & bake for another 10 minutes or until crisp & brown.
- 6. For pretty presentation, serve in large cupcake liners.
