Mykonos Tzatziki
- 1 tbsp. olive oil
- 3 cloves garlic, smashed and minced finely
- 1 Tb fresh lemon juice
- 1/4 tsp. fresh ground pepper
- 1/4 tsp. fresh ground sea salt
- 2 tsp chopped white onion
- 1 cucumber, peeled, seeded, sliced and drained *
- 1 tsp. chopped fresh dill
- 1 pint strained plain greek yogurt
- sprigs of mint
- Combine olive oil, garlic, lemon juice, onion and salt and pepper in a bowl.
- Using a whisk, blend olive oil mixture with the yogurt.
- Whisk in the cucumber and dill.
- Chill for at least two hours before serving.
- Garnish with fresh grated black pepper, fresh dill or a sprig of mint before serving.
- * to drain cucumber of water, peel, slice long-wise, cut out seeded area, place in colander and sprinkle with sea salt, cover with paper towels and place in fridge overnight to drain water (w/colander in bowl to catch water)
