Mom'S Biscotti
- 5 1/2 cups FLOUR
- 6 EGGS
- 1 1/2 cups SUGAR
- 3 teaspoons BAKING POWDER
- 1/2 (JAR IS 1 1/2 OZ) jar ANISE SEEDS WHOLE
- 1 teaspoon ANISE EXTRACT
- 1 teaspoon LEMON EXTRACT
- 1 1/2 cups VEGETABLE OIL
- In a large bowl mix all dry ingredients
- Make a hole in center of dry ingredients and add all other ingredients. (I added all but oil and added oil slowly while mixing)
- Mix well. Knead into soft dough. (I used dough hook on mixer for mixing and kneading)
- Divide dough into 6 sections. Roll each into long rope.
- Place 3 ropes on cookie sheet and flatten
- Bake at 350 degrees for 20 minutes or until light golden brown
- Slice diagonally, turn each on its side and bake for 5 minutes more.
- Check that they are light - medium brown for crunchy.
