Spicy Orange Tilapia
- 1 lb. tilapia
- 1/2 cup flour
- 1/2 tsp pepper
- 1 tsp salt
- 3 tbsp olive oil
- 1/2 cup orange/pineapple/banana juice (or orange juice or any orange combination juice)
- 2 tbsp lemon juice
- 2 tbsp ginger root, grated
- 1 tbsp Sriracha chile sauce
- 1 onion, sliced
- Combine flour and pepper and salt. Cover tilapia filets in flour mix - there is no wash, so only a light layer will stick.
- Heat olive oil in a large pan. Cook floured tilapia in olive oil - 2 minutes on each side. Remove tilapia from pan and set aside, it will not be fully cooked.
- Add juices, ginger, chile sauce and onion to pan. Saute onions in pan until almost cooked, 6-8 minutes. Return tilapia to pan and finish cooking.
