Sweet Squash Soup
- 1 Large Acorn Squash
- 1 Large Butternut Squash
- 1 Large Onion
- 1/4 stick butter
- 2 Cans Chicken or Vegetable Broth
- 1 Package Cream Cheese
- ! Cup Brown Sugar
- 1/2 teaspoon garlic salt
- Salt and Pepper to Taste
- Cut up both squashes and onion
- Saute onion in butter with garlic salt
- When onion is transparent add cans of broth and squash pieces
- Bring to a boil
- Lower heat and cook until squash pieces are soft
- While cooking squash,
- Cut cream cheese into cubes and mix with brown sugar
- When the squash is cooked use a blender, (we use an immersion blender so it stays in the pot), to soften the squash/onion
- Mix the cream cheese/brown sugar mixture in with the squash making sure it is smooth
- Return to the stove to marry flavors Add salt and pepper for taste
