Cactus Gumbo Chocolate Barbecue Pork Loin With TomatilloS In A Ancho & Chipotle Pepper Sauce
- 1 whole boneless pork loin
- 3 table spoons of cocoa powder
- 6 stems of cactus cleaned and slice
- tri color carrotd cleaned and diced
- 6 tomitillos washed and diced
- salt pepper
- 1 cup chili powwder
- 1 diced white onion
- 4 chipotle peppers hydrated and diced
- 4 anch chili peppers hydrated and diced
- 1 ounce a-1 steak sauce
- 1 ounce tabasco sauce
- 1 ounce worshtishire sauce
- 1 # can of chili sauce
- 1 #10 can of alto cucina whole peeled plum tomatoes
- 11 table spoon of sea salt
- 1 table spoon of garlic powder & onion powder
- & italin seasoning
- 2 small cans of white beans and red kidney beans
- 1 cup of chopped pickled jalapeno's
- scallions, vermont sharp cheddar and pepperjack cheese for garnish
- tostitois tortia cups for filling up with chili
- take the pork cut it into cubes and dress with cocoa salt, pepper,chili powder pan sear then cover with saran wrap and foil in oven at 350 degrees for 1 hour as the meat is cooking put the rest of the ingriedients in a large pot at simmer until pork is done add pork carefully and let cook for 3 more hours very slowly then eat you rock can also be made with beef, lamb,turkey, or ground beef
