Unusual Fruit Salad With Yogurt Dressing
- 1 can (15 ounce) citrus salad
- 1 ripe avocado
- 1 tablespoon lemon juice
- 1 small red onion
- 1 tablespoon sugar
- 1 medium cucumber, peeled and thinly sliced
- 1 medium sweet red pepper, seeded and diced
- 1 10 ounce package fresh baby spinach
- 1 8 ounce container plain yogurt
- salt and pepper, to taste
- 1. Drain Citrus Salad, reserving syrup for dressing.
- 2. Peel and slice avocado, then dip in lemon juice to prevent darkening.
- 3. Peel and slice red onion into slivers, and sprinkle with sugar.
- 4. For yogurt dressing: In small bowl combine reserved syrup with yogurt and stir until smooth.
- 5. At serving time, arrange individual salad plates by placing a base of spinach topped with an arrangement of the citrus salad, avocado, red onion, cucumber, and red pepper.
- 6. Drizzle with yogurt dressing.
