Teri'S Chili
- 2 # ground beef or sirloin
- 2-3 medium onions, roughly chopped
- 3 garlic cloves minced
- 1 stalk celery finely chopped
- 1/2 red pepper chopped into 1/2" pieces
- 1/8th of a green pepper similarly chopped
- 1 small can tomato paste (or approx. 5 T)
- 2 T. chili powder
- 2 T cocoa powder
- 1/4 tsp cinammon
- 1/8 tsp red pepper flakes
- 1 t. hot paprika
- 1/2 tsp cayenne pepper
- 3 T ground cumin
- 1 tsp dried oregano
- 1 tsp sweet paprika
- 1 28 oz can crushed tomatoes
- 1 28 oz can diced tomatoes
- 1 can whole tomatoes (drained--cut up tomatoes)
- 2 cups broth (chicken or beef, whatever is on hand)
- 1 can (drained and rinsed) kidney beans
- 1 can (drained and rinsed) cannelini beans or whatever white bean you like
- brown the meat; add the onions, garlic, red and green peppers, and celery--suate for about 10 mins till veggies are softening a bit and mixture is blended together.
- Add to meat/onions, the tomato paste and all the spices at once and stir on relatively high heat to release the aromas. Saute for about 5 mins stirring constantly; if you need to add a little broth at this point to scrap up the bottom of the pan, do so.
- Thereafter add the canned tomatoes, etc. Do not add the beans until toward the end, to avoid bean breakdown.
