Mom'S Granola
- 4 cups large flake oats
- 1 cup each of some combination of seeds and nuts:
- cashew pieces
- sunflower seeds
- almonds (whole, chopped or slivered)
- pumpkin seeds
- 1/2 c sesame seeds
- 1/2 cup oil (safflower, grapeseed, coconut)
- 1/2 cup sweetener: maple syrup, honey, agave
- ADD AFTER BAKING: 1 cup each of one or more dried fruits - raisins, chopped apricots, cherries
- Mix all ingredients together except for dried fruit.
- Line large baking pan with Silpat or parchment paper.
- Preheat convection oven to 325' F
- Spread mixture evenly on pan.
- Bake on middle rack for approx. 25 minutes. Turn with spatula, and continue baking for a few minutes until lightly browned.
- Add 2 cups dried fruit and stir into granola.
- Leave in warm oven for about 10 more minutes. Let cool.
- Store in glass container.
