Vegetable Wraps With Hummus And Feta
- 1 med cucumber, peeled and chopped
- 1 cup grape tomatoes, halves
- 1/2 cup chopped red onion
- 1/4 cup chopped bottled roasted red bell peppers
- 1 1/2 tablespoons chopped pitted kalamata olives
- 1 1/2 tablespoons chopped fresh dill
- 1 tablespoon grated lemon rind
- 1/4 cup hummus
- 2 Mediterranean style white flatbreads (such as Toufayan)
- 2 romaine lettuce leaves
- 1 1/2 tbsps crumbed feta cheese
- 1. Combine first 7 ingredients in a bowl, toss well.
- 2. Spread 2 tablespoons hummus onto each flatbread, top with 1 lettuce leaf. Spoon vegetable mixture evenly onto half of each flatbread, leaving a 1/2 inch border around edges. Top evenly with feta, fold flatbread in half over vegetable mixture.
