Shrimp And Avocado With Ginger

  1. 1. Blanch the bell peppers in boiling water just until tender-crips, about 1 1/2 minute. Put on plate and cover to keep warm.
  2. 2. Heat olive oil and vinegar in large frying pan. NOTE: cover partially with lid while heating, it will spatter A LOT at first.
  3. 3. Add shrimp, onion, salt, pepper and ginger, cook on med stirring often, about 2 minutes.
  4. 4. Add bell peppers, stir, then add avocado. Stir gently for approx 1 minute.
  5. 5. Place on platter and sprinkle with dill.
