Shrimp And Avocado With Ginger
- 1 1/2 lbs raw, peeled & deveined shrimp
- 1/2 red bell pepper and 1/2 yellow bell pepper, seeded and sliced in 1/4 inch strips
- 1/2 cup olive oil
- 1/2 cup red wine vinegar
- 1/2 cup chopped red onion
- 1-2 tsp salt to taste
- 10 turns of the peppermill
- 3 tblsp fresh grated ginger
- 1 large avocado peeled and sliced
- 3 tbls chopped fresh dill
- 1. Blanch the bell peppers in boiling water just until tender-crips, about 1 1/2 minute. Put on plate and cover to keep warm.
- 2. Heat olive oil and vinegar in large frying pan. NOTE: cover partially with lid while heating, it will spatter A LOT at first.
- 3. Add shrimp, onion, salt, pepper and ginger, cook on med stirring often, about 2 minutes.
- 4. Add bell peppers, stir, then add avocado. Stir gently for approx 1 minute.
- 5. Place on platter and sprinkle with dill.
