Beef And Vegetable Fajitas
- 1 lb. flank steak
- 1 (9 oz.) Spanish onion, sliced
- 1 (8 oz.) sweet red pepper, sliced into strips
- 1 garlic clove, finely chopped
- 1/4 c. lime juice
- 1 Tbsp. olive oil
- 1 Tbsp. balsamic vinegar
- 3 Tbsp. fresh coriander, chopped
- 1/4 tsp. ground cumin
- 1/8 tsp. salt
- 8 flour tortillas
- Place steak, onion, and red pepper in shallow dish.
- Combine garlic, lime juice, oil, vinegar, coriander, cumin and salt.
- Pour over steak and vegetables.
- Toss, cover and refrigerate 1 to 2 hours.
- Preheat broiler.
- Broil steak 8 to 10 minutes on one side; turn.
- Add vegetables and remaining marinade; broil 10 more minutes, or until meat is done.
- Cut meat at 45 degree angle in thin slices.
- Mound steak and veggies in tortillas.
- Fold and serve.
