Steamed Green Beans W/ Shitake Mushrooms
- 1 pound green beans, fresh or frozen
- SHIITAKE MUSHROOM SAUCE
- 3 cups shiitake mushrooms, coarsely chopped
- 4 cloves garlic, pressed
- 2 shallots, minced
- 2 teaspoons ginger root, grated
- 1/2 cup water
- 4 teaspoons rice vinegar
- 2 teaspoons Dr. Fuhrman's VegiZest or other no salt veggie seasoning
- 1 14.5-ounce can chopped tomatoes, no salt
- Steam green beans until almost tender, about 5 minutes.
- Saute' mushroom sauce ingredients, except for tomatoes, for four minutes. Add chopped tomatoes and simmer for two more minutes. Toss green beans in with the mushroom sauce and simmer two more minutes to meld flavors. Add a little more water if necessary.
- NOTES: This mushroom sauce is great for any steamed vegetable and may be served over brown rice.
