Basic Stir Fried Chicken

  1. Slice chicken thinly.
  2. slice vegetables, crush garlic, and mince ginger root. combine sherry, soy sauce, salt and sugar
  3. heat half oil and add garlic and ginger root and stir fry a few times. Add chicken and stir fry until it looses it pinkness (2 min). Add sherry mixture and stir 1 minute to blend. Remove chicken.
  4. heat remaining oil. Add vegetables and stir fry 1-2 minutes. stir in stock and heat quickly. return chicken. cook uncovered
  5. blend cornstarch and cold water to a paste and stir to thicken chicken.
  6. serve over rice.
