Basic Stir Fried Chicken
- 1 chicken breast
- 1 pound vegetables
- 1 garlic clove
- 2 slices ginger
- 2 TBs sherry
- 1 TBS soy sauce
- 1/2 tsp salt
- 1/2 tsp sugar
- 3 tsp oil, divided
- 2 tsp cornstarch, divided
- 2 TBS water, divided
- 1/2 cup stock
- Slice chicken thinly.
- slice vegetables, crush garlic, and mince ginger root. combine sherry, soy sauce, salt and sugar
- heat half oil and add garlic and ginger root and stir fry a few times. Add chicken and stir fry until it looses it pinkness (2 min). Add sherry mixture and stir 1 minute to blend. Remove chicken.
- heat remaining oil. Add vegetables and stir fry 1-2 minutes. stir in stock and heat quickly. return chicken. cook uncovered
- blend cornstarch and cold water to a paste and stir to thicken chicken.
- serve over rice.
