Scotty'S Oyster Casserole
- 1 pint oysters
- 2 cups cubed bread
- 2 cups broken saltines
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped bell pepper
- 1/4 cup finely chopped parsley
- Combine these dry ingredients in a bowl or bag
- oyster liquid
- 1/2 cup dry sherry
- 1/2 cup evap. milk
- 1 teaspoon salt
- 1/8 teaspoon white pepper
- 1 teaspoon worcestershire
- dash of Tabasco
- combine these ingredients
- 1/4 pound melted butter
- In a casserole layer ingredients beginning with the dry ingredients, then a layer of oysters. The dry ingredients should be the final layer.
- Next pour the wet ingredients, less the butter, over everything as evenly as possible.
- Finally pour butter over everything and sprinkle with paprika.
- Place casserole in preheated 325 degree oven until it bubbles, about 25 minutes.
