Perfect Ginger Cookies
- 1 1/4 cups whole wheat pastry flour
- 1 cup all-purpose flour
- 2 teaspoons ground cinnamon
- 2 teaspoons cloves
- 1 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground white pepper
- 1/2 teaspoon salt
- 1 cup dark brown sugar, packed
- 1/4 cup vegetable oil
- 1/3 cup unsulfured molasses
- 1 X large egg, room temp.
- 1 1/4 cups chopped crystallized ginger
- granulated sugar, for rolling the cookies
- Preheat oven to 350 F. Line 2 baking sheets with parchment paper.
- Sift flours, baking soda, spices, and salt into a large bowl and combine mixture. Beat brown sugar, oil and molasses on medium speed for 5 min. Turn mixer to low, add egg and beat for 1 minute. Scrape sides and bottom of bowl and mix again for 1 minute. With the mixer still on low, slowly add dry ingredients to bowl and mix on medium speed for 2 min. Add crystallized ginger and mix until combined.
- Scoop dough with a spoon into a 1 3/4 inch ball, then flatten lightly with your fingers. Press both sides of each cookie in sugar and place on sheet pans. Bake for exactly 13 minutes. Let cookies cool on sheets for a couple of minutes, then transfer to wire racks to cool completely.
