Quick Vegetable Soup(Microwave)
- 2 slices bacon
- 1 (16 oz.) can mixed vegetables (undrained)
- 1 (16 oz.) can tomatoes (undrained)
- 1/2 Tbsp. instant beef bouillon
- 1/8 tsp. garlic powder
- 2 Tbsp. grated Parmesan cheese
- Place bacon in single layer in a 1 1/2-quart microwave-safe casserole.
- Cover with paper towel.
- Microwave on High for 2 to 3 minutes or until crisp; set aside.
- Preserve 1 tablespoon of drippings; discard remainder.
- Add vegetables, tomatoes, cut into small pieces, onion, bouillon and garlic powder to drippings. Cover with casserole lid.
- Microwave on High 9 to 11 minutes or until steaming hot and flavors are blended.
- Crumble bacon and add to soup.
- Sprinkle cheese over individual bowls of soup.
- Makes about 4 servings (125 calories).
