Quick Vegetable Soup(Microwave)

  1. Place bacon in single layer in a 1 1/2-quart microwave-safe casserole.
  2. Cover with paper towel.
  3. Microwave on High for 2 to 3 minutes or until crisp; set aside.
  4. Preserve 1 tablespoon of drippings; discard remainder.
  5. Add vegetables, tomatoes, cut into small pieces, onion, bouillon and garlic powder to drippings. Cover with casserole lid.
  6. Microwave on High 9 to 11 minutes or until steaming hot and flavors are blended.
  7. Crumble bacon and add to soup.
  8. Sprinkle cheese over individual bowls of soup.
  9. Makes about 4 servings (125 calories).
