Greek Orzo Summer Salad

  1. 1. boil pasta (per directions on box) until al dente. Drain and rinse with cool water.
  2. 2. put oil in small frying pan and toast pine nuts for 3 minutes-until slightly browned. Put red pepper flakes in oil as it comes off the heat. Let oil, pine nut, red pepper flake mixture cool.
  3. 3. Put remaining ingredients into bowl. Add cooled orzo and oil mixture.
  4. 4. Chill salad and serve.
