Greek Orzo Summer Salad
- 1 box orzo pasta
- 1/2 cup olive oil
- 1/3 cup pine nuts
- 1 bunch green onions (chopped)
- 1 tsp. red pepper flakes
- 1/3 sliced black olives
- 2/3 cup crumbled feta cheese (sheep's milk preferred)
- 1/2 bunch chopped fresh basil
- 1 large tomato (diced)
- 1/2 cucumber seeded and diced
- 1 cup fresh shredded parmesan
- 1. boil pasta (per directions on box) until al dente. Drain and rinse with cool water.
- 2. put oil in small frying pan and toast pine nuts for 3 minutes-until slightly browned. Put red pepper flakes in oil as it comes off the heat. Let oil, pine nut, red pepper flake mixture cool.
- 3. Put remaining ingredients into bowl. Add cooled orzo and oil mixture.
- 4. Chill salad and serve.
