Herbed Roquefort Biscuits
- 1 (3 oz.) pkg. Roquefort cheese, crumbled
- 2 Tbsp. minced green onion tops
- 1 tsp. dried whole basil
- 1/2 tsp. dried whole thyme
- 2 c. all-purpose flour
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. baking soda
- 1/4 c. plus 2 Tbsp. cold unsalted butter, cut in pieces
- 3/4 c. buttermilk
- Combine the first 4 ingredients in a small bowl; set aside. Combine flour, baking powder, salt and baking soda in a medium bowl.
- Cut in cheese mixture and butter with a pastry blender. Turn dough out onto a floured surface; knead lightly 7 to 8 times. Roll dough to 1/2-inch thickness; cut with a 2 1/2-inch biscuit cutter.
- Place biscuits on a lightly greased baking sheet.
- Bake at 450u0b0 for 13 to 15 minutes.
- Yields 14 biscuits.
