East India Pie
- 1 unbaked pastry shell
- 2 egg yolks
- 1 cup sugar
- 1 teaspoon cinnamon
- 1 teaspoon cloves
- 1/2 cup pecan halves
- 1/2 cup raisins
- 1 tablespoon melted butter
- 2 egg whites
- 1 tablespoon vinegar
- 1/2 pint cream, whipped
- Beat egg yolks well until light and thick.
- Sift together sugar, cinnamon and cloves. Gradually add sugar mixture to egg yolks.
- Add pecan halves, raisins and melted butter.
- Beat the egg whites until stiff but not dry and fold them gently into the sugar mixture. As you fold them in, add vinegar.
- Pour into an 8-inch unbaked pastry shell. Bake in a hot oven, 450 degrees for 10 minutes. Then reduce heat to 350 degrees and bake 25 minutes more.
- Cool and serve with unsweetened whipped cream.
