Couscous Primavera With Grilled Shrimp
- 2# Jumbo Shrimp
- Toasted large pearl Couscous
- Olive oil
- Fresh lemons
- Limes about 4 of each
- 1 head of garlic
- salt & pepper
- fresh herbs;cilantro
- basil parsley
- thyme
- rosemary or oregano
- Fresh Veg. such as Carrots
- squash
- peppers eggplant
- asparagus and/or artichokes.
- clean shrimp(can leave tails on) marinate shrimp just before grilling with olive oil, salt & pepper to taste ,grated fresh garlic, fresh lemon & lime juice and chopped fresh herbs of your choice. Prepare Couscous according to package instructions. Grill or saute selected fresh Veg. Grill shrimp. Add cooked veg to prepared Couscous season with s&p to taste, gently toss mixture. Serve on large platter or bowl, add Grilled Shrimp. Garnish with quartered slices of Lemon/lime sprinkle with same type chopped fresh herbs used on shrimp. Serve immediatly. can be either 1st course or main entree.
