Benjamin Muffins
- 1 cup whole wheat flour
- 1/2 cup oat flour
- 1/2 cup all purpose unbleached flour
- 4 tablespoons turbinado sugar
- 1/2 cup brown sugar
- 1 1/4 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- big pinch nutmeg
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 cup old-fashioned rolled oats
- 1 can pumpkin
- 3 eggs
- 1/4 cup canola oil
- 1/4 cup plain, low-fat yogurt
- 1/4 cup applesauce
- 2 teaspoons vanilla extract
- 1 cup coarsely chopped pecans or walnuts
- 1 cup cranberries
- 1) Preheat oven to 350 degrees. Grease and lightly flour a muffin pan.
- 2) Mix together dry ingredients in large bowl. Make a well in the center; set aside.
- 3) Mix together wet ingredients, including pumpkin. Add to dry ingredients and stir just until combined.
- 4) Fold in pecans and cranberries
- 5) Bake at 350 degrees for about 20 minutes, or until fork comes out clean.
