Cajun Chicken Pasta
- 1 large pack of chicken breast
- 1 green bell pepper
- 1 red bell pepper
- 1 yellow onion
- 1 jalapeno
- 4 cans of Del Monte Italian style diced tomatoes
- 1 pack of fettuccine
- 1 bag of shredded parmesan cheese
- Garlic salt/ or fresh garlic
- Cajun seasoning
- Black pepper
- Olive oil
- In a large skillet heat up the olive oil. Saute Red and Green peppers, onions, and jalapenos. Then add the cans of diced or stewed tomatoes. Add Cajun seasoning, garlic and pepper. In a separate skillet heat olive oil and then add chicken diced in 1 inch pieces. Add seasoning to chicken and don't stir too much. Let the chicken brown and almost caramelize on each side. When chicken is finished add it to the tomato and pepper mixture. Bring water to boil and cook fettuccine shouldn't take more than 12 min add a little bit of oil to the water and stir the pasta so it doesn't stick together. Drain pasta and mix half of it in a large bowl with the tomato mixture. Add more fettuccine if needed but don't add too much! Before serving mix with more Cajun seasoning to taste and toss with bag of parmesan cheese.
