Cucumber Dill Salad
- 2 large cucumbers, washed
- 1/2 large red or white onion (personal preference)
- salt
- 1/2 cup white distilled vinegar
- 1/3 cup 2% or reduced fat sour cream
- 1/3 cup whole mayonaise (not the low fat stuff)
- fresh or dried dill
- First, slice the cucumbers & onion very thin either with a mandolin or the old fashioned way... with a knife. Put the sliced cucumber & onion in a bowl in layers... put a few slices in and shake a little salt over the slices & then put another layer of cucumber slices down & lightly salt again & so on. You don't need a lot of salt, just a light sprinkle. Next, pour some or all of the vinegar over the cucmber slices & let sit for about half an hour to an hour. When time's up, drain in a colander (DO NOT RINSE!). Put the slices in a clean bowl & fold equal parts sour cream & mayonaise genlty over the slices. When the cream and mayo are folded well with the slices, put about a tablespoon to 2 tablespoons dill weed (personal pref.) & lightly fold again until mixed throughout. Either chill for later or eat right away!
