Eva'S (Angelo'S Mom) Recipe For Meat Ball Soup In Cabbage With Egg-Lemon Mix
- 1 cup rice (I think your white tall tea cups is fine)
- 1 onion sliced in very small pieces, smaller than cubes
- 1 egg
- salt pepper
- bunch of small cut parsley
- 1 stick butter
- 1 cup buillon
- 2 eggs
- 1 lemon
- 2 pounds ground beef
- 1 Cabbage

- All purpose flour, about 1 cup
- mix beef, rice, onion, egg, salt, pepper, some parsley
- roll into small meat balls
- roll the meat balls into flour
- Cut cabbage into slices, first one way, then another way, so the slices are pretty thin.
- In a soup pan, boil some water, about half a pot or less, add a Knorr and some olive oil (3-4 Tb)
- Once water is boiling, add cabbage. If there's too much cabbage, add more hot water (from the tea pot).
- When its almost ready (10-15 minutes, water should be boiling), still a bit firm, drop in the meat balls.
- The cabbage and meat balls need about 45 minutes to cook, make sure the rice is cooked as well.
- make sure the whole thing is covered in water, you may need to boil some separately and add a cup here or there. cook it partially covered, and when the water starts boiling. turn down heat. After it's done, turn off heat.
- Make egg-lemon mix, beat 2 eggs and one lemon (my egg-lemon mix is one egg, two lemons, hers is probably better :)
- then do the same trick - mix a little soup mix into the egg-lemon mix, stir, repeat 4-5 times, and then pour all the egg-lemon mix back into the soup.
- NB. the ground meat can be beef, or half beef and half pork. with pork it tastes better.
