Addictive Chocolate Chewies
- 3 cups powdered sugar
- 1/2 cup good quality cocoa powder unsweetened
- 2 Tablespoons flour, potato starch (for passover) or Gluten free flour
- 3 egg whites
- 2 cups chopped pecans or walnuts
- 1/3 cup sweetened coconut
- 3/4 cup good quality chocolate chips
- Heat oven to 350 degrees
- Line two cookie sheets with parchment paper.
- Blend together, sugar, cocoa and flour in a mixing bowl.
- Add slowly egg whites one at a time beating well after each one and scraping bowl often.
- Beat at high speed 1 minute. Stir in coconut, pecans or walnuts, and chocolate chips.
- Drop by heaping tablespoons onto cookie sheets about 2 inches apart. Bake 18 minutes
- Remove from oven and let cool, then peel off parchment store in container or freezer. When serving sprinkle with powdered sugar.
