It'S Bean Great Summer Salad
- 3/4 lbs haricot verts or green beans
- 1 16 ounce can white beans (Great Northern or cannellini), drained and rinsed
- 2 cups halved grape or pear tomatoes, halved
- 1/2 cup (4 ounces) pre-cooked smoked salmon, pulled or cut into small pieces
- 2 tablespoons aged sherry vinegar
- 1/2 small red onion, finely chopped
- 4 cloves fincely chopped garlic
- 2 teaspoons Dijon mustard
- 1/4 cup olive or walnut oil
- sea salt and crushed ground pepper to taste
- Bring a large pot of water, seasoned with sea salt, to boil. Add the haricot vert or green beans and cook until tender but firm. Drain thoroughly to remove excess water.
- In a large bowl, mix together the haricot vert or green beans with tomato halves, white beans, salmon pieces, red onion and garlic. In a small bowl, use a whisk to blend vinegar, mustard and salt and pepper to taste. Add the oil slowly, whisk until the mixture thickens. Pour mixture over salad in larger bowl and fold it in using large serving spoons or forks.
