Sauce
- 1 sm onion chopped
- 3 cloves garlic chopped
- Olive oil- extra virgin (EVOO)cover bottom of pot
- 1 tbl Italian seasoning
- 1 tbl basil
- 1 tbl oregano
- 1 sm can tomato paste
- 1 lg can tomato puree
- 2 lg cans crushed tomato
- 2 lg cans tomato sauce
- Bay leaf if you have it
- Sprinkle of Parmesan cheese
- Salt and pepper
- Coat bottom of pot with EVOO generously
- Saute onion and garlic until soft
- Add 3 seasonings and saute a minute or 2
- Add tomato paste and stir until it darkens
- Pour in crushed tomato and stir
- Pour in tomato puree and stir
- Add tomato sauce and stir
- Once well combined add bay leaf and Parmesan cheese
- Salt and pepper to taste .
- Cook on very low all day, stirring occasionally
