Shrimp And Mango Caribe
- 1 lb. uncooked shelled deveined shrimp (16 - 20 count)
- 2 Tbsp. neutral oil (like Canola)
- 1 Tbsp. shallot, finely chopped
- 1 jalapeno pepper, finely chopped
- 1/2 cup white wine
- Juice of 1 lime
- 1 Tbsp honey
- 1 mango, cut in 1/2 inch dice
- 1 red pepper, cut in 1/2 inch dice
- 2 scallions, chopped
- 1/2 cup cilantro, roughly chopped
- Salt and pepper to taste
- Heat oil in pan over medium high heat. Add shrimp and saute for 3 min on each side, or until pink. Add shallot and jalapeno and saute for 1 minute. Add white wine. Reduce liquid by half and remove from heat. Add lime juice and honey. Mix together with shrimp mixture in pan. Add mango, red pepper, scallions, cilantro, salt and pepper to taste. Chill (for up to 4 hours. Serve on Boston lettuce or frisee mix.
