Texas White Chili
- 5 cans Northern white beans
- 3 qt. chicken broth
- 2 tbsp. canola oil
- 2 onions, chopped
- 2 cloves minced garlic
- 8 oz. chopped green chilies
- 4-6 chicken breast cooked and shredded
- 3-4 tsp. each cumin, oregano, coriander
- pinch of cloves and cayenne
- 1/2 tsp. creole seasoning
- grated cheese
- chopped green onions
- Saute onions and garlic in oil and add cumin, oregano, coriander, cloves, and cayenne.
- Let cook together until onions are clear.
- Cook over medium heat so your garlic doesn't burn. Add beans, broth and salt.
- Let come to a simmer.
- Smash half beans.
- Add cooked shredded chicken and green chilies.
- Stir together and let simmer 20 minutes.
- Spoon into bowls and top with shredded cheese and sliced green onions.
- Serve with jalapeno or cheese corn bread.
