Chicken And Sausage Jambalaya
- 3/4 lb. boneless chicken
- 3/4 lb. hot sausage
- 2 Tbsp. oil
- 1/2 large onion, chopped
- 1/2 bell pepper, chopped
- 2 stalks celery, minced
- 1 clove garlic, minced
- 1 lb. can tomatoes
- 1 c. rice
- 2 c. liquid (this includes tomato liquid as well as chicken broth)
- 1 c. smoked ham, chopped
- 2 green onions, chopped
- 1/8 c. parsley, chopped
- 1/4 tsp. cayenne pepper
- salt and pepper to taste
- Brown chicken in oil.
- Remove chicken and saute onion, bell pepper, celery and garlic in grease.
- Add tomatoes and ham.
- Add liquid.
- Cover and simmer for about 20 to 30 minutes.
- Bring to a boil.
- Add rice, chicken, sausage, green onions, parsley and seasonings.
- Cook, covered, over low heat for at least 20 minutes or until rice is done.
